The ability of the inhibitor to inhibit the action of bovine trypsin is measured spectrophotometrically in a system in which benzoyl-arginine-ethyl ester is utilized as the typsin substrate.


Ovomucoid or trypsin inhibitor is an abundant protein in most avian egg whites. The hen′s egg protein is composed of about 186 amino acid residues, and is highly glycosylated.


A trypsin inhibitor prevents the trypsin enzyme from breaking down the protein or reduces the enzyme's efficiency.
